Fresh and deliciously tangy ... that's what defines a perfect lemon cake. You will fall in love with our gentle recipe, ideal for enjoying the coming of sunny days! And to always take care of your muscles, we have made sure that our Whey adds a significant amount of protein to this recipe.


  • 2 eggs
  • 150 ml semi-skimmed milk
  • 150 g skyr (Icelandic yogurt)
  • 2 lemon (zest & juice)
  • 30 g Coconut oil
  • 90 g stevia or erythritol
  • 250 g spelled flour
  • 60 g Vanilla Whey Protein
  • 2 tsp baking powder
  • optional sugar icing (100 gr caster sugar + 3 tbsp lemon juice)


  1. Preheat the oven to 180 °.
  2. In a bowl, combine the eggs, milk, skyr, lemon zest and juice, coconut oil (liquid) and stevia.
  3. Then add the flour, Whey and baking powder and mix everything together to create a dough.
  4. Prepare a cake tin, with baking paper. Add the dough.
  5. Put in the oven for 35 to 40 min. Leave to brown. To check doneness, use the tip of a knife.
  6. As desired, prepare a glaze and coat the cake once cooled.
  7. Enjoy your meal !
